Tomato Feta Soup with Garlic Grilled Cheese

Ingredients
  

For the soup:
  • 8 ripe tomatoes chopped
  • 1 red bell pepper chopped
  • 1 onion sliced
  • 3 garlic cloves whole
  • 200 g feta cheese
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh basil a handful
For the garlic grilled cheese:
  • 4 slices of sourdough or sandwich bread
  • 2 tbsp butter
  • 2 garlic cloves
  • 4 slices of cheese e.g. cheddar, gouda, or mozzarella

Method
 

  1. Preheat oven to 200°C (390°F).
  2. Place tomatoes, bell pepper, onion, and garlic cloves on a baking tray.
  3. Crumble feta over the vegetables and drizzle everything with olive oil.
  4. Roast for 25–30 minutes until soft and slightly caramelized.
  5. Transfer roasted vegetables and feta to a pot. Add fresh basil.
  6. Use a blender to puree until smooth.
  7. Season with smoked paprika, salt, and black pepper.
  8. Gently heat if needed and adjust seasoning.
  9. For the Garlic Grilled Cheese, butter the outside of the bread slices.
  10. Rub the inner sides with a cut garlic clove for extra flavor.
  11. Place cheese between two slices of bread.
  12. Grill in a hot pan until golden brown and crispy on both sides.
  13. Serve the warm soup in bowls with grilled cheese on the side (or dipped directly in).
