Omelet Toast Sandwich

Ingredients
  

  • 3-4 eggs
  • 2 slices sandwich bread
  • salt and pepper to taste
  • butter or oil for frying
  • optional toppings: cheese, ham, tomato slices, avocado, spinach, etc.

Method
 

  1. Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
  2. Heat a non-stick skillet over medium heat. Add a bit of butter or oil. Pour in the beaten eggs and immediately place the two slices of bread into the egg mixture, pressing them slightly so the bottom side soaks up some egg. Flip each slice of bread so the other side also gets coated in egg.
  3. Once the egg is mostly set but not fully cooked, carefully flip the entire omelet with the toast over, so the bread is now facing down.
  4. Add your desired toppings on top of the egg. Reduce heat to low and cover the pan for 1–2 minutes so the cheese melts and the toast becomes golden and crisp.
  5. Fold in the sides of the omelet over the bread. Then fold one slice of toast over the other like a sandwich. Remove from the pan and serve warm.
