- In a medium saucepan, combine sugar, water, pumpkin puree, and pumpkin spice.
- Bring the mixture to a gentle boil over medium heat, stirring regularly.
- Once it begins to bubble, reduce heat and simmer for about 8–10 minutes until slightly thickened.
- Remove from heat and stir in the vanilla extract.
- Strain the syrup through a fine mesh sieve or cheesecloth for a smooth texture (optional).
- Let it cool, then transfer to a clean bottle or jar.
- Store in the fridge for up to 10 days.

- Use it in your homemade pumpkin spice latte, drizzle over pancakes, stir into oatmeal, or blend it into smoothies.
