Gnocchi in Wild Garlic Sauce

Ingredients
  

Gnocchi
  • 300 g mashed potatoes (cooled)
  • 100–120 g all-purpose flour
  • 1 egg
  • salt
Wild Garlic Sauce
  • 1 handful wild garlic (about 30 g)
  • 100 ml cream
  • 30 g grated Parmesan (optional)
  • 1 tbsp butter or olive oil
  • Salt and pepper to taste
  • A squeeze of lemon juice

Method
 

Gnocchi
  1. Mix the mashed potatoes with the egg and a pinch of salt.
  2. Gradually add the flour and knead briefly until a soft, slightly sticky dough forms.
  3. Roll into finger-thick logs, cut into bite-sized pieces, and shape if desired.
  4. Bring salted water to a boil, reduce to a simmer, and cook the gnocchi in batches until they float (2–3 minutes). Remove and drain.
Wild Garlic Sauce
  1. Roughly chop the wild garlic.
  2. Heat butter or olive oil in a pan. Sauté the garlic briefly (don’t brown).
  3. Add cream and let it simmer for 1–2 minutes.
  4. Add wild garlic and blend until smooth.
  5. Stir in Parmesan, season with salt, pepper, and lemon juice.
Combine
  1. Add gnocchi to the sauce, toss gently to coat.
    Serve warm with extra Parmesan if desired.
