Gnocchi
- Mix the mashed potatoes with the egg and a pinch of salt.
- Gradually add the flour and knead briefly until a soft, slightly sticky dough forms.
- Roll into finger-thick logs, cut into bite-sized pieces, and shape if desired.
- Bring salted water to a boil, reduce to a simmer, and cook the gnocchi in batches until they float (2–3 minutes). Remove and drain.
Wild Garlic Sauce
- Roughly chop the wild garlic.
- Heat butter or olive oil in a pan. Sauté the garlic briefly (don’t brown).
- Add cream and let it simmer for 1–2 minutes.
- Add wild garlic and blend until smooth.
- Stir in Parmesan, season with salt, pepper, and lemon juice.
Combine
- Add gnocchi to the sauce, toss gently to coat.Serve warm with extra Parmesan if desired.
