For the salad
- Finely chop the green cabbage and dice the cucumber. Set aside in a large bowl
For the dressing
- In a blender or food processor, combine avocado, olive oil, Parmesan, basil, parsley, lemon juice, and shallot. Blend until creamy. Season with salt and pepper
- Pour the dressing over the chopped vegetables and toss to combine
- Plate the salad and top with a ball of burrata. Add nachos or crushed tortilla chips on the side or as topping.Serve and enjoy!
