Ingredients
  

For the salad
  • 1/2 small green cabbage
  • 1/2 cucumber
  • 1 burrata
  • nachos or tortilla chips
For the dressing
  • 1 ripe avocado
  • 2-3 tbsp olive oil
  • 50 g grated parmesan cheese
  • 1 handful fresh basil leaves
  • 1 handful fresh parsley
  • juice of 1/2 lemon
  • 1 shallot (or red onion)
  • salt and pepper to taste
  • optional: 1 clove garlic for extra depth

Method
 

For the salad
  1. Finely chop the green cabbage and dice the cucumber. Set aside in a large bowl
For the dressing
  1. In a blender or food processor, combine avocado, olive oil, Parmesan, basil, parsley, lemon juice, and shallot. Blend until creamy. Season with salt and pepper
  2. Pour the dressing over the chopped vegetables and toss to combine
  3. Plate the salad and top with a ball of burrata. Add nachos or crushed tortilla chips on the side or as topping.
    Serve and enjoy!
